2004. The second release of Verso Cellars Cabernet is a worthy companion to the 2003. The wine, while full bodied has a lighter feel on the palette than the 2003, bursting with dark orchard fruits with hints of vanilla and spice. Works well with pork, beef and roast chicken. Great with cheese and chocolate for dessert. Aged 19 months in French Oak barrels.

2005. The growing season was long and perfect. The wine provides great balance and exemplifies the dark fruit and spice tones that resonate in each Verso Cellars Cabernet. The owner’s personal favorite of the four vintages. A great food wine that will improve with proper bottle aging. Aged 24 months in French Oak barrels.

2006. The youthful Verso Cellars cabernet is drinking great. An abundance of grapes produced a Bordeaux style cabernet, exhibiting the entire tastes associated with the previous vintages from the East Orchard Mesa vineyard. This new release is a Bordeaux style blend of 90% Cabernet Sauvignon and 10% Merlot and has been in the works for 2 years. This spent 12 months in French oak, and then bulk aged in stainless steel until we bottled in early September. Aromas of cranberries, blackberries, nutmeg and pepper.
