We aged this wine partially in stainless steel and the other half in oak barrels. The crisp green apple and citrus tones from the stainless and the buttery caramel tones from the French and Oregon Oak. Delightful and not overpowering. Reveals spicy butterscotch aromas as well as flavors. Medium-bodied and satin textured. Structured enough to stand alone or enjoy with your favorite plate. Question? Christopher Wines (West Linn, OR) -- (Winery Info & All Wines) Winemaker: Jay Somers This wine comes from the great Le Pavillon Vineyard in the Dundee Hills and was grown organically and biodynamically. It was made in the style of Chablis with all stainless steel fermentation and no malolactic fermentation. This again, like our Cuvee Lunatique, is pure Chardonnay, but up another level in complexity. Five different clones of Chardonnay are fermented in older barrique utilizing the ambient yeasts on the fruit. The finished wine is then left on the lies undisturbed for nearly two years before it is carefully racked and bottled without filtration.
