Our own creation based on an idea stolen from French and Belgian fruit beers. We flavor our Brut with one ounce of raspberry syrup made from frozen berries and sugar. Not sparkling Kool-aid, but with an intoxicating raspberry bouquet to will be a delight by itself, paired with appetizers, or a fine brunch.

This 2000 Blanc de Blancs is superbly crisp and inviting. It exudes elegant fruit aromas with hints of fresh Asian ginger, apples, pears and just a whisp of white pepper. The texture is supple and fresh - slghtly creamy - lasting just long enough to leave hints of freshly baked baguette and delicate hazelnut essense. The flavors are reminiscent of peach, Fuji apple, warm patisserie with a tropical vanilla bouquet.
