Cass Winery, opened in May 2005, is located on the east side of Paso Robles. We specialize in Rhone varietal wines from our 100% estate grown vineyard. The Cass Cafe, which is located in our tasting room, is open for lunch daily from 12-4pm. We have an outdoor area for tasting and picnic areas. We also offer to serve our wine to customers at a table instead of having them stand at the bar. We cater to private parties in our library room and barrel room. I grew up in South Africa, in a town called Somerset West, close to Cape Town, in the middle of the South African winelands. After high school and a half year working in England, I started my studies in Viticulture and Enology at the University of Stellenbosch and received my Bachelors degree, Enology. I also hold an Honors degree in Enology and am qualified as a judge for wine evaluation. I’ve spent time working at various wineries which helped further my understanding of wine tremendously. I am a big supporter of mentorship when it comes to learning the art. Before work as enologist/winemaker at Cass Winery, I’ve been doing “flying winemaking” for quite a while. The experience I gained thought this was invaluable and my approach to winemaking is influenced by every producer under whom I worked. My approach to winemaking is one of minimal intervention. Wine is a natural product and one should keep it that way. Because wine should express the area where grapes grow, the winemaking already starts in the vineyard. The harder you work in the vineyard, the easier the work is in the winery.
