We have committed ourselves to making the Morey name synonymous with fine quality and, to be honest, somewhat rare wines. We do not plan on expanding to the level of producing tens of thousands of cases. All of our wines are aged at least 24 months in barrels in order to ensure the best interaction between the wine and the oak, and to obtain a silky, complex, and dense wine. Maintaining these barrels—tasting the wines weekly, topping them off, racking from one to another—is nothing less than a labor of love. If you knew how much manual labor is involved in creating such great wines, you would understand how a winemaker learns to love his (or her!) wines. Now you understand how we cannot increase production without sacrificing the love that goes into these wines. And the Moreys are not known for sacrificing quality! And, yes, we put up a pretty good fight for what we believe is right, fair, and honest, as our Irish and Scottish ancestors believed.
