2006 Cabernet Sauvignon Estate
  • Appellation: Paso Robles
  • The 2006 Cabernet Sauvignon estate fruit was hand harvested, de-stemmed, and allowed to cold soak 48 hours before fermenting in small 200-gallon open top lots. During the fermentation process the must was manually punched down twice daily and given specifically timed “de le stage” for approximately 20 days then gently pressed.
