  • The apples, grown in Central Maine, were pressed by out staff and allowed to ferment slowly in the fall. Once attenuated, (fully fermented), this young fruit wine was allowed to slowly clear over time while being racked from vessel to vessel. This apple wine is aged nearly two years before it is offered for sale. The result is a delicate semi-sweet wine with a clean apple profile. Apple wines when young are distinctively apple, but when allowed to age slowly become smooth and Riesling like.

  • This unique wine is produced by first fermenting the apples to a full dryness. We then blend the apple with an imported black currant reserve to give the wine an aromatic finish and sharp taste which mirrors the liqueur Cr?me de Cassis.   • This wine is made from the russet apple, which is known for exceptional quality in the production of wine. The raspberries are then fermented separately, yielding semi-sweet and aromatic flavors. The strong esters of the raspberry are blended with the dryness of the fully fermented apple, yielding a fruit wine which has a pronounced raspberry profile with an apple finish.
