This wine reflects the heritage of our winemaker who learned winemaking in his native French Beaujolais region. The grapes are grown on the winery hillsides overlooking the Wisconsin River where it develops aromas of fruit with deep berry flavors. Domaine du Sac has a medium bodied palate with overtones of raspberries and dark cherries. Ages five months in French and American oak.

2007 Domaine Reserve

Made of fully ripe grapes from thirty-four year old vines and grown on the steepest slopes of the winery's vineyards. The age of the vines and the excellent exposure give this wine a personality that reflects the "terroir," the specific character imparted by the soil and place it is grown. A traditional fermentation method is used to bring out the spice and berry flavors concentrated in the fruit. A year of aging in oak barrels enhances the depth, finesse, and complexity.

Our Ice Wine 2006 was hand picked at the winery vineyards on December 6, 2006 capturing the sweet fall essences of the St. Pepin grapes. Each year weather conditions dictate if we are able to attain an ice wine and press the grapes frozen, keeping the intense sweet grape flavors. The frozen grapes had harvest sugar of 35.4 degrees brix and were fermented slowly to 12% alcohol. The residual sugar of 14.8 degrees brix and nuances of honey and orange zest combine for a special treat.
