Our yield per acre is only 2 1/2 tons. This wine was fermented in open top containers and manually punched down at least 4 times a day. This wine is 100% Tempranillo from the Vista Creek Vineyard in Paso Robles. The grapes were harvested at 24.5° Brix, de-stemmed and lightly crushed.
