Sangiovese derives its name from sanguis Jovis meaning "the blood of Jove (Jupiter)." This wine was cooled during fermentation, allowing for extended time to have the grape skins in contact with the juice. Characteristically, this wine has a high acidity and moderate tannins. But because of the fermentation process, there is dark, deep red color and exploding fruit. Just a hint of earthiness. Excellent by itself and with elegant dinners.
